Italian Chicken Parmigiana Recipes

This following Italian chicken parmigiana recipes are always a big hit. By the way, in Italy - when a Chicken is coated in herby parmesan the dish is called Chicken Parmigiana.

My favorite italian chicken parmigiana recipe

The following one makes 6 servings. My family claims this tastes better than any they get at the local Italian restaurants.
3-4 whole chicken breasts

2 medium or 3 small eggs (slightly beaten)

1 tsp salt
1/4 tsp pepper

8 tbs vegetable oil

1 cup dry bread crumbs (fine)

2-3 cups tomato sauce

1/4 tsp garlic powder

1/4 tsp basil

1 tbsp butter

1/2 cup Parmesan (parmigiana) cheese (grated)

8 oz. mozzarella cheese, sliced (cut into triangles)

Hammer chicken lightly until 1/3-inch thick. Mix egg, pepper and salt. After you dipped the chicken breast in egg mixture you then roll it in bread crumbs. Heat oil in a skillet until it is hot. Brown chicken (both sides). Put chicken into a shallow baking dish. Pour away remaining oil from skillet. Mix tomato sauce, garlic and basil in a frying pan. Bring to a boil and let it simmer for 10 minutes.

Stir in margarine. Pour sauce over chicken. Scatter parmigiana /Parmesan cheese over sauce; cover dish and bake at 350 degrees for half an hour (30 minutes). Put mozzarella slices on chicken and bake until cheese is melted (approx. 10 minutes).

Low Fat Variation

Especially In America this Italian dish is served covered in tomato sauce and mozzarella cheese. If you prefer a less fattening dinner you can just cook the chicken with parmesan and serve it on top of dressed salad.

Easy Italian Chicken Recipe with Parmesan

Ingredients:
4 chicken breasts, skinned
4 slices mozzarella cheese
parmesan cheese
1/2 cup flour
oil
1/2 cup Italian bread crumbs
salt, pepper to taste
1 jar of your favorite spaghetti sauce or 1 qt. homemade
1 egg, beaten with 2 T. milk or water

Directions:
Place chicken between two layers of saran or wax paper and pound out even and flat. If too large, cut in half. Mix flour, crumbs and salt and pepper together. Dip chicken in egg mixture then bread with flour mixture. Fry in small amount of oil until golden brown. In casserole, pour half of the spaghetti sauce in bottom, layer chicken on top...sprinkle with parmesan cheese...rest of spaghetti sauce then mozzarella on top. Bake in hot 350 oven for 35-45 minutes, until bubbly and cheese is melted...enjoy...great with a tossed salad and garlic bread. If you do not have Italian flavored bread crumbs, you can use for this italian chicke recipe regular bread crumbs with 1 teaspoon Italian seasoning crumbed and mixed in.
