Italian Easter Recipes

Minestra di paqua is the traditional beginning of the Easter meal, called Neapolitan Easter Soup. The soup recipe contains veal, beef shank, pig’s tails, sausages, salamis, spices, onion, leafy vegetables like cabbage, lettuce, beet greens and white wine for flavor. It is simmered for a couple hours to bring out the blend of flavors.

Recipe for Carciofi Friti-Fried Artichoke:

Another, simple Italian Easter favorite is Carciofi Friti. Clean 6 artichokes by peeling the tough outer leaf off, trim the tops and cut them in eighths.

Squeeze the juice from half of a lemon in a bowl of water, add a pinch of salt and enough flour to make a paste. Soak the artichokes for an hour.

Then rinse them off, pat dry, flour them, dredge in an egg and fry until crisp and golden brown in hot oil. Don’t let the outside burn before the inside is cooked.

Recipe for Roasted Spring Lamb
with Rosemary Potatoes:

Start with 2 heads of garlic with tops trimmed, brushed with olive oil, roasted for 30 minutes and then mashed well. Rub the mash mixture on the leg of Lamb. Season with salt, pepper and a tablespoon of chopped rosemary.

Roast for an hour and 30 minutes. Then add small red potatoes that have been brushed with olive oil and another tablespoon of rosemary and roast the lamb and potatoes for another 30 to 40 minutes.

Colomba Cake:

Colomba cake is an Easter tradition that is a cake shaped like a dove. They are given as gifts and eaten throughout the day. The cakes are sometimes made with moscato wine or some have pieces of chocolate inside.

Others have a chocolate crust filled with Gianduja cream which is chocolate mixed with hazelnuts. Some are also made with candied berries as breakfast bread.

Uova di Pasqua:

Easter eggs of all kinds, made from chocolate, hard boiled, or given as presents are part of the Easter tradition in Italy.

Finely decorated chocolate eggs are part of the dessert on the Easter Buffet, decorated with rich icing and candies.
