Italian Pastries Recipes

Ingredients

½ cup confectioner’s sugar - keep this back for dusting
1 cup regular flour - not self-rising
2 quarts of vegetable oil
1 ½ teaspoons white sugar
2 eggs, beaten well
¼ teaspoon vanilla extract
1 cup of ricotta cheese
A pinch of salt
2 teaspoons baking powder

Using a deep-fryer for heating the oil, make sure it gets to 375 degrees.

Mix the flour, baking powder, sugar and salt. Next stir in the eggs, vanilla and ricotta cheese. Mix these items over low heat until well combined. The batter should be sticky. Using a tablespoon drop these in the hot oil, do not overcrowd. The zeppole will turn in the oil by themselves.

Fry until they are golden brown which takes about 4 minutes. Drain and then dust them with the confectioner’s sugar you had kept back for this purpose. They are best if served warm and are delicious with coffee.

Pasticiotti

Another great recipe for your gift giving is pasticiotti. This is a pastry from Italy that has your choice of fillings. It can be a scrumptious pudding, chocolate cream or a ricotta. This is a tasty treat for any type of occasion. They take a little over an hour to make.
