A true Italian wedding mostly runs late into the night and does traditionelly feature a lot of different foods and wines to the engaged couple and their family and friends. The guests should bargain for a menu with at least 13 courses. Such an menu then always includes a special Italian wedding soup, made with savory meatballs and rice.



Recipe for Italian Wedding Soup - made easy

The following recipe is supposed to satisfy six people or more:

Firstly you mix a half pound of ground veal, a half pound of ground sirloin beef, a slightly beaten egg, a half cup of fresh bread crumbs, a quarter cup of minced parsley and a half cup of grated Romano cheese with salt, pepper and nutmeg until you get a uniform mass.

Then you form that into small meatballs and arrange them arrange on a baking sheet, and cook all at 350 degrees for about 30 minutes or longer if you haven't preheated the oven. But they shouldn't be too brown.

Finally you bring four cups of chicken stock in a large pot to boil and add two cups of torn escarole and five minutes later the meatballs. You reduce the heat and let it simmer for some minutes. Now you can serve an excellent meal!
